“In November 2008 I attended my first “Cooking With Kara” Class, following a grim diagnosis from a yearly blood panel of tests. I was diagnosed with Type 2 Diabetes and my blood glucose levels were elevated to the level of being a candidate for insulin injections. I was placed on medication and told by my physician to radically change my eating and exercise habits or insulin was the next step. I was unable to schedule a nutritionist appointment until after the first of the year, so I decided to attend Kara’s class to see what I could gain from eating whole foods. I made positive changes that day and modified my diabetic food plan to incorporate healthy substitutions and choices, based on Kara’s suggestions. I am now introducing healthier choices in menu planning for my family and hope that leading by example will have a positive influence in my adult overweight sons.
The following Positive Results are a direct result of Kara’s education in the past 4 months:
My Diabetes A1C test results ( a measurement of glucose readings over 3 months) decreased from over 14 ( dangerously high) to an acceptable 7.3 ( 6 is ideal). My fasting sugar went from 385 to an average of 125 or below, by my current glucose readings. My doctor is very pleased and endorses the changes I have made. My goal is to soon wean myself off my medication and control my sugar thru diet and exercise alone. My cholesterol decreased also—Yeah !!
I have dropped 2 clothing sizes and lost 20 lbs. ( a total of 52 lbs lost in the past year).
I have had my first winter without using my asthma inhaler, and no bouts of recurring chronic bronchitis, colds or flu. Walking several times each day I am sure helped too, as well as virtually eliminating dairy and most animal products from my diet. Healthiest winter I have ever had!
I have not had to take ANY antacids in 4 months. I literally used to down a large sized bottle of Pepcid AC tablets each week, due to continous heartburn and indigestion. I now spend the savings from antacids on fresh produce and Almond/ Soy Milk. Great trade off.
My tastebuds seem enhanced now by the flavors of new vegetables and fruits, since I have reduced sugar and salt from my cooking. I don’t crave chocolate, sweets or salty snacks like I once did. I was formerly a chocoholic folks! If I can do this, anyone can.
I feel more relaxed and energized now. I have a very stressful job as a complaint handler and feel better able to handle the day and stay in control.

Mejia and her crew showed us how to use a pressure cooker to save time, the Vita Mix mixer to blend things smoothly and the simplicity of eating clean, healthy food that brought alive a variety of tastes in our mouths. My favorites included the walnut pate’, autumn trail mix, roasted kale chips and pumpkin dishes. The fresh organic pumpkin made each dish fabulous, from the pumpkin chowder with corn salsa, the adzuki, wild rice and pumpkin croquettes to the pumpkin pudding, and of course the fresh salad. Mejia and her crew created a warm welcoming place for us all to enjoy the food and the instruction.”
